ABOUT dustin
Chef Dustin Busby is co-owner/chef of Hoof, Knoxville's Farm Fresh Food Truck, as well as Farm Manager at Century Harvest Farms in Greenback. Originally from Charleston, Dustin began cooking at a very young age, and after working his way from dishwasher to line cook, pursued a career in the kitchen. Upon graduating from the Cordon Bleu program in Orlando, he worked with Disney until eventually taking a position as sous chef at the Woodlands, a Relaix & Chateaux property in his hometown. During his time there, Dustin spent his vacations staging at restaurants around the world, including The French Laundry, The Fat Duck, and Le Manoir. Most recently, Dustin worked as Executive Sous Chef at Blackberry Farm, until following his passion of locally-sourced, sustainable, farm-to-table fare to his current endeavors.
Dustin channeled this passion for his Trust Fall dinner, a seven-course extravaganza of fresh local ingredients taken to unimaginable heights. Adding to the drama, he prepared this feast in a public parking lot without benefit of an oven or running water. Pressure? What pressure?
Chef Busby's unique culinary creations were specially paired by Sommelier Andy Chabot. Andy recently accepted the prestigious James Beard Award for Outstanding Wine Program. A graduate of the CIA, Andy has proceeded past the second tier of the Court of Master Sommeliers Exam and was also the recipient of the Michael Biccoransi Scholarship.
