about Brian

Trust Fall is excited to introduce our next chef, a newcomer to Knoxville Brian Runge. Brian began his career in Athens, Georgia, under Chef Hugh Acheson, opening his flagship restaurant ​Five and Ten​. He was quickly promoted to sous chef working the next three and a half years under Chef Hugh while the restaurant received national acclaim.

Following a stint in Tampa, Brian continued his culinary journey as sous chef for Michelin starred French Chef Christian Delouvrier at Brasserie Ruhlmann in Chicago. His desire to mix old and new world food grew, eventually leading Chef Runge to the role of chef de cuisine at Graham Elliot. Brian joined his next restaurant venture at Premise, successfully combining the culinary worlds of classic technique and modernist art form in Chicago’s neighborhood of Andersonville.

Most recently, Brian started Guerilla Dining, as an independent consultant for the restaurant and catering world. We’re glad Chef Runge’s path has led him to Knoxville with his family and even more thrilled that he’s brought his skills to this unique Trust Fall dinner—a collaboration with local preservationist group, Knox Heritage, as part of their Summer Supper series.

The secret location of this dinner will be disclosed to guests on the day of the event. Part of the Trust Fall experience is placing your trust in the featured chef, so no special dietary requests or preferences may be made (no refunds are offered), as we let the chefs drive this train.
